Healthy Chicken Meatloaf with Spinach & Feta
A lighter Mediterranean-style chicken meatloaf packed with spinach, feta, fresh herbs, garlic, and bright lemon flavor.

- 2 pounds lean ground chicken
- 1 tablespoon olive oil
- 1 small yellow onion, finely diced
- 3 garlic cloves, minced
- 5 ounces fresh spinach, roughly chopped
- 1 cup seasoned whole-wheat breadcrumbs
- 2 large eggs, lightly beaten
- ¾ cup crumbled feta cheese
- 2 tablespoons chopped fresh oregano
- 1 tablespoon chopped fresh parsley
- 1 teaspoon lemon zest
- 1 teaspoon kosher salt
- ½ teaspoon black pepper

Preheat the oven to 375°F. Lightly grease a 9-by-5-inch loaf pan or line a rimmed baking sheet with parchment.

Heat the olive oil in a skillet over medium heat. Cook the onion for 4 to 5 minutes, then add the garlic and spinach. Cook until the spinach wilts; cool slightly.

In a large bowl, gently combine the ground chicken, spinach mixture, breadcrumbs, eggs, feta, oregano, parsley, lemon zest, salt, and pepper.

Shape the mixture into a loaf in the prepared pan. Avoid overmixing so the meatloaf stays tender.

Bake for 50 to 55 minutes, or until the center reaches 165°F.
