  • 1 (4-ounce) can diced green chiles
  • ½ cup white or yellow onion, diced
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • Black pepper, to taste

    Drain and rinse the pinto beans. Dice the onion and mince the garlic.

    Add the pinto beans, green chiles, diced onion, minced garlic, chicken broth, cumin, chili powder, salt, and black pepper to a medium saucepan. Stir to combine.

    Bring the mixture to a boil over medium-high heat.

    Reduce the heat to low and maintain a gentle simmer. Cook uncovered for 45 minutes, stirring occasionally, until the onion is tender and the flavors have blended.

    For a creamier texture, lightly mash some of the beans against the side of the pan with a spoon. Add a splash of broth or water if the beans become too thick.
