Swedish Meatballs

- 1 pound 99% lean ground chicken
- ¾ cup panko breadcrumbs
- 1 large egg, lightly beaten
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper
- ½ teaspoon salt
- ⅛ teaspoon freshly ground black pepper
- 2 garlic cloves, minced
- 1 tablespoon dried oregano
- ½ medium onion, finely diced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups chicken or vegetable broth
- ¼ cup heavy cream
- ½ cup whole milk
- 2 tablespoons Worcestershire sauce
- 3 tablespoons Dijon mustard
- Salt and black pepper, to taste
- 2 cups uncooked rice

Preheat the oven to 420°F. Line a rimmed baking sheet with parchment paper or lightly grease it. Finely dice the onion, mince the garlic, and lightly beat the egg.

Start the rice in a rice cooker according to the manufacturer’s instructions, or cook it on the stovetop according to the package directions.

In a large bowl, gently combine the ground chicken, panko, egg, paprika, cayenne, salt, black pepper, garlic, oregano, and diced onion. Avoid overmixing.

Shape the mixture into 12 large meatballs or 20 small meatballs and arrange them evenly on the prepared baking sheet.

Bake for about 18 minutes, or until the meatballs are cooked through and reach an internal temperature of 165°F.

While the meatballs bake, melt the butter in a large skillet over medium heat. Whisk in the flour and cook for 1–2 minutes, until the roux turns light golden brown.

Slowly whisk in the broth, followed by the heavy cream and whole milk. Stir in the Worcestershire sauce and Dijon mustard. Bring to a gentle simmer and cook, stirring often, until the sauce thickens.

Season the sauce with salt and black pepper to taste. Add the cooked meatballs to the skillet and simmer for 1–2 minutes, turning to coat them in the sauce.
